It’s been a late night for me. I got home from Vancouver at 8:30pm and got straight to baking. Coming home late was not part of my plan, I usually keep myself on a pretty tight schedule. To say I was stressed would be an understatement. So rather than further stressing myself with a new recipe or technique I decided on something simple for todays post. I’ve always been known for my cupcakes and these Oreo cupcakes are always a big hit!
I’ve always had a sweet tooth, so when I found out that Oreo’s are vegan it was all over for me. I love Oreo’s. They are quick, convenient, can be found at any grocery store or gas station, and happen to bake into cupcakes perfectly!
For this recipe you can use any chocolate cupcake/cake recipe of your choosing. I used “The Best Chocolate Cupcake Recipe” from the blog chocolatecoveredkatie.com. Since I made mini cupcakes I bought a bag of mini Oreo’s and added them into the middle of each cupcake before baking.

My cupcakes are cooling (they smell so good!). It’s currently 10:45 pm and I am absolutely wiped. I will be icing/decorating tomorrow. As these are chocolate cupcakes Fang sadly has not had a taste, but stay tuned for my post tomorrow because icing is one of his favorite treats!

Hi Cara!
First of all, can I just say your cupcakes look DELICIOUS! Also, it is so crazy how you decided to bake after such a long day! I love how you twisted the recipe and added the oreos on your own. I have tried making oreo cupcakes before but have never done it where you just add oreos in the middle! Usually I crush up oreos and mix them into a vanilla cake mix! If you’re up for it, I also really enjoy that recipe and would recommend it!

These cupcakes look SO good! It is too bad Fang can’t have any, but I’m sure he is pumped for icing later.
I love how you were able to navigate a long day by adjusting your schedule and ideas in order to put less stress on yourself. That’s a skill I think a lot of us need to work on:)

Wow, I admire the commitment Cara. I don’t think I could’ve convinced myself to start baking that late mostly because I wouldn’t want to clean up after, haha. How does it work with the oreo? Does it go in the batter? Or do you place it at the bottom of the cupcake paper? Either way, they sound amazing, I’m seriously craving chocolate now.

Fair! The clean up is the worst part for sure! When I make the oreo cupcakes I fill the cupcake liner 1/4 way full press the oreo in and then top it with more batter. The oreo ends up soft and delicious! Let me know if you give it a try!
