Lemon Raspberry Cakes

It has been another crazy week, I seriously cannot wait to rest up during reading break! In all honesty I really wanted to make something with puff pastry but it takes so long and I unfortunately did not give myself enough time. So I used a tried and true vanilla cake recipe, but instead of using a regular cake pan I tried out some new mini bundt cake pans. For the icing I did my typical recipe (see my post on Oreo cupcakes to find it) but I added lemon zest and lemon oil to the mixture. Finally I made a raspberry compote. I don’t have an exact recipe for this, I just cooked down some raspberries with lemon juice, water, and sugar until the raspberries were fully cooked and it looked jam like (has anyone made raspberry compote before? The smell wafts through the whole house and makes it so hard not to eat it right out of the pot!)

Once the cakes were out and cooled I realized that they were quite thick, so I cut them in half and sandwiched the compote on the inside. From there I piped in the icing, dusted with more icing sugar and then sprinkled some lemon zest on top.

It’s not the best video but here they are! These were absolutely delicious, who doesn’t love the combo of lemon and raspberry!? I would definitely make these again, but maybe add some ginger into the icing for a little spicy kick! I did not get a video or photo of Fang enjoying these, but rest assured he did steal some and he approves!
